My mama has been making us the most beautiful ice cream cakes for birthdays recently. So when it was her birthday earlier this month, that meant it was my turn to give her recipe a try. Luckily, it's easy to make -- and very easy to customize to the birthday-person's tastes.
You will need:
- 1 box brownie mix (I used GF)
- 2 flavors of ice cream (I used store-bought vanilla and made this dark chocolate)
- 1 bag of Oreo cookies, crushed (I used GF)
- A springform baking pan
- Homemade whipped cream
- Prepare the brownie mix according to the package instructions, and slightly underbake it by a few minutes in the pre-greased pan.
- Let the brownies cool completely. Soften your first flavor of ice cream in the microwave for 15 seconds, then spread it as evenly as possible in a layer on top of the brownies.
- Sprinkle about 1/2 the crushed cookies in a layer on top of the ice cream.
- Soften your second flavor of ice cream in the microwave for 15 seconds, then spread it as evenly as possible in a layer on top of the crushed cookies.
- Add the remainder of the crushed cookies in an even layer.
- Place the cake in your freezer until the ice cream has fully set. (I left mine in overnight.)
- Prepare your whipped cream. Take the cake out of the freezer, and carefully remove the interlocking band from the pan.
- "Frost" the top and sides of the cake with the whipped cream, and then put it back in the freezer for another hour or two.
- Let sit out 15 minutes before serving.
