Mint cookie is my very favorite flavor of ice cream. But I didn't have it for two years after cutting gluten out of my diet! Until now. Until my cousin gave me his old ice cream maker. Grab a spoon, let me introduce you to my favorite ice cream!
You will need:
- 2 cups 2% milk
- 2 cups heavy cream
- 1 cup sugar
- 1/2 tsp salt
- 1 tsp vanilla extract
- 1 tsp peppermint extract
- 8-10 gluten-free sandwich cookies, crushed
- Green food coloring (optional)
Freeze your ice cream maker bowl according to the product instructions. In a mixing bowl, stir together all your ingredients except for the cookies until the sugar has dissolved. Pour this into your ice cream maker and run it for ten minutes. Add the cookies, and once the ice cream has thickened (about 30 minutes), transfer it to a container and freeze it for two hours.
