It's officially barbecue season! Which, in our household, is designated by temps rising above 60 F. Last weekend during a backyard BBQ, our good friend Mike made the most amazing grilled asparagus and agreed to let me share his recipe with you.
You will need:
- 1 bunch of asparagus (if you live near me, there's no excuse not to eat the Hadley grass!)
- Olive oil
- 2 cloves garlic, minced
- Salt and pepper to taste
- 1 tsp dried basil
- 1 tsp dried oregano
- Tin foil
- Grated Parmesan cheese (optional)
Get your grill nice and hot. Lay the asparagus out on a sheet of tin foil, drizzle with olive oil, and sprinkle the rest of the ingredients evenly over all the asparagus. Wrap the tin foil around the asparagus, and grill until the tine of a fork can pass easily through the thick end of the spears. Sprinkle with Parmesan cheese and enjoy.
I love this recipe. It was so surprisingly delicious, and really didn't taste like asparagus (try this on picky eaters). Plus it balanced out all of the meat consumption we accomplished in the same seating.
