After having something like this at a restaurant a few weekends ago, I couldn't wait to get home and try to replicate it myself. I was actually concerned, upon reading it on the menu, that it would be too much comfort food (as if there could be such a thing). Luckily my curiosity got the better of me. The pizza is substantial enough to be a good cold-weather dish, but also somehow light and easy enough to stand alone in a casual summer (outdoor) dinner. This pizza might be the best of both worlds. This pizza might be the best of everything.
I tried making my own version at home a few days ago, and it turned out pretty damn close. Give it a try and let me know what you think.
Ingredients:
- Frozen pizza crust (gluten-free or otherwise)
- 1 medium red potato, sliced as thin as possible
- 1 cup shredded fontina cheese
- 1/3 cup grated Parmesan cheese
- 4 cloves garlic, minced
- Salt and pepper
- Olive oil
- Dried rosemary
Preheat oven according to crust instructions. Layer cheese, potatoes, and garlic evenly, drizzling with olive oil and sprinkling with salt, pepper, and rosemary. Bake according to crust instructions.
