Oh man. Peanut butter has been a huge food staple in my life, from my childhood years of being a picky eater to now. I couldn't believe how easy it was to make at home -- and usually about $1 cheaper than at the grocery store, if not more. It tastes better, and I like knowing exactly what's in it.
To make it at home, simply process 16 ounces of unsalted, dry roasted peanuts in a food processor on high until totally blended, about 6-8 minutes. I add one teaspoon of salt and two teaspoons of olive oil because I like mine a little creamier. Store in a jar in the refrigerator for up to a month.
I think this would be so good with honey roasted peanuts too, don't you?
