Happy National Chocolate Cake Day! That's right, the national holiday (sadly not yet officially recognized) is today. It might seem silly at first blush, but I think it's a great excuse to bake and enjoy something perfectly delicious in the middle of winter.
I used a mix from Beachouse Baking Company that my sister got me for Christmas. This is hands-down the best gluten-free cake mix I've ever eaten. Not only that -- it's vegan, too (alas, the store-bought frosting I used wasn't). But you'd have no idea taking a bite. It's moist, it has the consistency of classic cake, it's delicious...this is it. I want this cake for birthdays for the rest of my life.
I didn't exactly go all out with this cake. The mixer sat untouched in the corner because I was a little tired and, frankly, I wanted to get back to binge-watching "Scandal." (National Chocolate Cake Day doesn't ask too much of us, thankfully.) So I topped the cake with Betty Crocker vanilla frosting and some random sprinkles I found in the cabinet, and it was perfect. The best cake I've had in a long time. I had a piece for dinner last night as a pre-National Chocolate Cake Day celebration. Seriously, I can't stress enough how much this cake tasted like normal cake. Even Kristie loved it!
So pick up a cake mix and some frosting on your way home tonight and get in on the celebration, if for no other reason than simply that chocolate cake is good.
PS - Chocolate mousse pie, and puppy chow (or "muddy buddies," depending on where you live).
