i got up at 5:30 this morning to whip these up before kristie got up for breakfast (she's still asleep!). i love these for valentine's day breakfast, or valentine's day breakfast-for-dinner!
to make: use the recipe on whatever pancake mix you have, but add 5 - 6 drops of red food coloring to make them pretty + pink!
i used a heart-shaped cookie cutter to make the pancakes' shapes + buttered the inside of it to make sure it was easy to get the hearts out.
i poured a little more than one spoonful of pink batter into the cookie cutter and added a few chocolate chips.
try to be mindful that the pancake will puff up a bit inside the cookie cutter + might need a little extra time cooking. i had the best luck with medium-low heat. cook until the top of the batter is very bubbly.
i had to use a knife a couple of times to help ease the pancake out of the cookie cutter once it was done cooking + because i was half asleep was totally surprised at how hot the cookie cutter got!
after using a sharp knife to help separate the pancake from the cookie cutter, gently lift it up, leaving the heart-shaped pancake on the pan. flip + cook normally!
keep going until you have as many as desired. i stopped at 5 since they made such a nice shape on the plate.
